Faites chauffer \u00e0 feu moyen pendant 1 \u00e0 2 minutes, en remuant constamment, jusqu\u2019\u00e0 ce qu\u2019ils soient aussi croustillants que de la guanciale. \u00c9gouttez-les sur du papier absorbant et r\u00e9servez la graisse rendue dans la po\u00eale.\n        <\/li>\n<li style=\"margin-bottom: 15px;\">\n            <strong>P\u00e2tes al dente (8-10 min) :<\/strong><br \/>\nPortez \u00e0 \u00e9bullition une grande casserole d\u2019eau tr\u00e8s l\u00e9g\u00e8rement sal\u00e9e (le jambon \u00e9tant d\u00e9j\u00e0 sal\u00e9). Faites cuire les spaghettis une minute de moins que le temps indiqu\u00e9 sur l\u2019emballage. <strong>Important :<\/strong> conservez environ 300 ml d\u2019eau de cuisson avant d\u2019\u00e9goutter les p\u00e2tes.\n        <\/li>\n<li style=\"margin-bottom: 15px;\">\n            <strong>Sauce \u00e9mulsionn\u00e9e (3 min) :<\/strong><br \/>\nDans la m\u00eame po\u00eale o\u00f9 vous avez r\u00e9serv\u00e9 la graisse de jambon, ajoutez 100 g de flocons de fromage fondants et faites cuire 1 minute \u00e0 feu moyen. Ajoutez 2 cuill\u00e8res \u00e0 soupe d\u2019huile d\u2019olive vierge extra et du poivre noir en abondance ; remuez pendant 20 secondes. Versez imm\u00e9diatement 150 ml de l\u2019eau de cuisson r\u00e9serv\u00e9e et portez \u00e0 \u00e9bullition \u00e0 feu vif pendant 30 secondes afin de r\u00e9duire la sauce et d\u2019obtenir une \u00e9mulsion.\n        <\/li>\n<li style=\"margin-bottom: 15px;\">\n            <strong>Hors du feu :<\/strong><br \/>\n\u00c9gouttez les p\u00e2tes et ajoutez-les directement \u00e0 la casserole contenant l\u2019\u00e9mulsion. \u00c9teignez le feu ou retirez la casserole du feu. Ajoutez 60 g de Pecorino Romano et environ 50 ml d\u2019eau de cuisson des p\u00e2tes. Remuez vigoureusement en effectuant un mouvement circulaire pendant 30 secondes, jusqu\u2019\u00e0 obtenir une cr\u00e8me lisse et brillante (sans grumeaux de fromage). Si la sauce semble s\u2019ass\u00e9cher, ajoutez de l\u2019eau de cuisson des p\u00e2tes, une cuill\u00e8re \u00e0 soupe \u00e0 la fois.\n        <\/li>\n<\/ol>\n<h2>ASSEMBLAGE FINAL<\/h2>\n<hr style=\"border: 0; border-top: 1px solid #eee; margin: 0 0 20px 0 !important; padding: 0 !important;\">\n<ul style=\"margin-bottom: 30px;\">\n<li style=\"margin-bottom: 10px;\">Dressez les p\u00e2tes imm\u00e9diatement dans une assiette, en les servant chaudes en forme de nid.<\/li>\n<li style=\"margin-bottom: 10px;\">R\u00e9partissez les copeaux de jambon croustillants sur chaque assiette.<\/li>\n<li style=\"margin-bottom: 10px;\">Ajoutez les 20 g de fromage Pecorino restants, une derni\u00e8re pinc\u00e9e de poivre noir fra\u00eechement moulu et un filet d&rsquo;huile d&rsquo;olive extra vierge.<\/li>\n<\/ul>\n<blockquote style=\"margin: 20px 0; padding: 15px 20px; background-color: #f5f7fa; border-left: 4px solid #0073aa; font-style: italic;\"><p>\n        <strong>Conseil de Nonna : <\/strong>Ne laissez jamais le feu vif en fin de cuisson ; la chaleur excessive fera imm\u00e9diatement cailler le pecorino et g\u00e2chera la sauce.
